I've been crashing after meals. My pancreas must be shot. And since January 2021 Ive been creeping the weight and mid riff rolls back into lumpy places. I was 203 on January 1, and then found myself at 210 the day before Thansgiving on November 25th. What will I be by the New Year? A Puffin? A Pillsbury Dough Girl? Crashing my way into the New Year crying my jeans don't fit? Here we go again. The dreaded Obsessive Compulsive writing down and accounting for every crumb BUT it does show results.
So I Goggled Pancreas Health. Wrote down 15 foods that help heal the tiny 6 inch organ that I'm sure I've mistreated over and over. Funny, whenever I stop consuming sugar, I always feel better. When under great stress I blindly eat sugary, fat laden ice cream, and wonder why I feel so poorly.
I started the food plan on November 26, a few days before I got to food shop. I now use Instacart at ALDIS and drive there to pick up my online order from a store shopper who kindly does the shopping for me, and even puts bagged food items into my car for me. I did buy some of the selected special foods at ALDIS, but I also went online to Vitacost to purchase goldenseal petals in bulk, and to a place called mushroommanLLC and bought $50 worth of mushroom grow kits. Lions Mane and Reishi.
I'll be growing these indoors this Winter.
I picked up my food on November 28th, and feel empowered I have good foods to really get into my plan to heal my weakened pancreas - it has to be unwell if my body is crashing after every meal.

I decided to order yogurt culture to make my own yogurt. That cost $10.99. I boiled 6 jelly jar size mason jars and scrubbed out my small red and white cooler to store the milky mixture in to set the yogurt - this takes 48 hours.
Then I cleaned up the weight scale, and brought out my food measurement equipment. And my body measurement that I love. I can accurately measure myself all by myself.
I found the body measurement tape on Amazon several years ago.
So here is where I'm at tonight on 11/29. I've completed 4 days of measuring everything and have gone from 210 lbs. to 207.8.
Let's start from:
Day 1 - Friday, 11/26/2021.
Instead of fasting today, I decided to eat 3 very small meals. If hungry later I'll have boston bibb lettuce and broccoli sprouts. So I did good consuming 631 calories. 96 carbs. 18 fat. 26 protein. I'm not hungry. I did not crash after eating. I feel good. Tomorrow I'll swallow 1/2 teaspoon white sesame seeds and see how long it takes them to pass through the digestive system. That will tell how well my transit time is. A healthy transit time is 8-16 hours, Anything longer than 24 hours indicates a slow transit.
1.5 oz yam with Greek yogurt topped with garlic. a few almonds and baby brussel sprouts and bella mushrooms.
avocado with black cumin, 1/2 banana and coffee.
egg whites topped with broccoli sprouts.
631 calories. 96 carbs. 18 fat. 26 protein.

Day 2 - Saturday, 11/27/2021
Day 2 - (LOST 1.4 lbs since yesterday morn). Pancreas diet - 1/2 cup grits (I usually eat 1 cup) with cardamon seed, cinnamon. 1/2 poached organic pear with ginger root. (usually eat whole pear) . 1 spoonful white sesame seed (to do digestive transit time experiment) Organic coffee with fat-free Half n Half. HBP pills & Vascepa (for high triglycerides)
CALORIES 137 CARBS 28 FAT 2 PROTEIN 3
2:30 PM - main meal of the day. Light fluffy yet crisp Boston Bibb lettuce, shaved red cabbage, carmelized onion, garlic, jalapeno in olive oil, 2.5 oz 96% fat free mini burgers, 10 slices beets, 2 oz goat cheese in drained brine, 2 oz walnuts, fresh broccoli sprouts. No dressings. This was a # 10 meal. So flavorful and crunchy, delicious. beef burgers only 81 calories. CALORIES 606 CARBS 19 FAT 42 PROTEIN 40
Day 3 - Sunday, 11/28/2021
Day 3 begins. Since Friday, November 26, I've lost 2.2 lbs. Having egg whites with cooked peppers, onions, jalapeno, turmeric rhizome, garlic with a poached pear & fresh ginger, coffee.
Egg white omelet with loads of veggies.

5:45 PM - End of Day 3 - Pancreas Food Plan. Served over orgnic Boston Bibb lettuce - Scallops and shrimp sauteed in mushroom, garlic, lemon, and olive oil with baby brussel sprouts. Cooked with fresh carrot greens rosemary and thyme.
Total: Calories 504 Carbs 24 Fat 4 Protein 80

Day 4 - Monday, 11/29/2021
8:45 AM - 40 degrees. Trouble sleeping so I did laundry around midnight, & ordered a very strict list of food for Day 4 - 7 of the 1 week Pancreas Food Plan I created based on foods that assist the pancreas in working efficiently. Green leafy foods are going to be brought home this morning. Carbs will be lowered this week. Scale is exactly the same as yesterday. Haven't seen the spoonful of sesame seeds come out the other side since ingested 48 hrs. ago for digestive transit test.
Calories 212 Carbs 40 Fat 4 Protein 7 Ordered only foods I need for this pancreas food plan.
11:30 AM - 42 degrees. Back from picking up online food order. Carefully chose foods that fit my pancreas meal plan. tiny potatoes, Bibb lettuce, spinach, tiny tomatoes, pears, blueberries, broccoli, (frozen is great during off season), low fat cottage cheese, frozen wild caught cod, fresh salmon, beef cubes, and organic milk to make homemade yogurt. It's a great start to the week and beginning of December.
This salmon was delicious. measured 4 oz, fresh wild caught salmon.
I only cook in my cast iron skillets. Calorie 364 Carb 33 Fat 13 Protein 29

Some nutritionists recommend a ratio of 40 percent carbohydrates, 30 percent protein, and 30 percent fat as a good target for healthy weight loss. A 1,500 calorie diet with 40 percent carbohydrates translates to 600 calories per day from carbs. I track my meals on Spark America.

On November 30th, I'll be fine tuning this pancreas food plan. Also will get the fonts and allignment squared away on this blog. Tonight I wanted to get all the info down so I won't forget.
Praying that I can finally pass all the food through my entire digestive tract. It's been too long now. what's it waiting for? Over 72 hours - probably because I ate meat and fish.
